What’s In Our Burrito Bowl By Kristi Veliaj 

Dear Pretty Birds, 

Our healthy regime goes on and when it’s possibile we have fun in the kitchen, mixing ingredients and trying out new recipes. Finally we tried out the famous burrito bowl, without the tortilla, and we  loved it so much that it passed every test and we can’t wait to do it again. These burrito bowls are a great way to use up veggie leftovers (and chicken for the meat lovers) and there is plenty of goodies to go around here, that’s why every burrito bowl never tastes like the one before. It’s healthy and packed with protein, grains, greens, good fats and vitamins, excellent for a post workout meal. We decided in the office to keep it vegetarian but you guys go crazy with yours. 

Ingredients 

For 4 Bowls

1-1/2 cups black rice

2-1/2 cups water, plus more for soaking the rice

2 teaspoons cumin seeds

1-3/4 cups cooked black or pinto beans (or one 15-ounce can, rinsed)

3 tablespoons grape seed oil

Juice of 1 lime (about 3 tablespoons)

3/4 teaspoon chili powder

1/4 cup raw pumpkin seeds

1 avocado, diced

1 mango, diced

1 cup shredded cabbage

1/2 cup of red onions

1/4 cup of crumbled goat cheese

2 tablespoons of oregano leave

3/4 teaspoon of turmeric 

3/4 teaspoon of black pepper 

Salt

Method 

Place the rice in a saucepan and cover with plenty of cold water. Place over high heat and bring the water to a boil. Cook for 20 to 30 minutes, until the rice is tender. Combine the beans, cumin,oil, lime juice, chili powder, and salt in a mixing bowl. Let stand as the rice cooks. Once it is ready, drain through a sieve and return to the pot and let stand.

Then, slice the red onions and the cabbage, cut in small dices the avocado and the mango and crumble the cheese. When all the ingredients are ready, transfer the black rice to a plate or a bowl. Add the beans over the rice and top each serving (or the plate)  with avocado, mango, cabbage, onions, pumpkin seeds, cheese and oregano. Serve with lime wedges.
