#15 – Weekend Brunch With Bryan Boy

Hey There Pretty Birds,
Just in time for the last weekend before the Christmas holiday, we bring you our latest episode of Tamu’s Cafe with apple spiced muffins and baked veggie omelettes and a conversation on gay marriage. I’m so excited about having Bryan Boy on as he is such a wonderful and dynamic individual. He has been a personal inspiration over the years as he has evolved his brand of blogging into a successful media entity. I remember reaching out to him when I was contemplating launching All the Pretty Birds over 9 years ago and his kind response of encouragement. It’s been incredible to observe all of his amazing and pioneering achievements (his stint as a panel member on America’s Next Top Model was a first for bloggers). And it was so lovely to catch up with him this past fashion month to talk about his upcoming nuptials to his long time love. So here we go, enjoy the fun, and try the recipes – they are amazing!

Apple Spiced Muffins

1/2 cup dark brown sugar

¼  cup of vegetable oil

2 large eggs

1 cup of whole wheat flour

2/3 cup of white flour

1 teaspoon baking powder

Heaping 1/4 teaspoon salt

1 tablespoon ground cinnamon

2 cups peeled, cored and finely chopped baking apples (you’ll need 2 large apples)

6 tablespoons dark brown sugar for topping


Preheat the oven to 375°F. Grease a 12-cup muffin pan with butter or spray with non-stick cooking spray. In a bowl beat together oil and brown sugar until fluffy, 1-2 minutes. Scrape down the sides of the bowl with a rubber spatula. Add the egg and mix well, stopping to scrape the bowl if necessary, then add the flours, baking powder, salt and cinnamon. Beat on low speed until just combined. The batter will be very thick. Add the chopped apples and mix until just combined and remember to not over-mix. Divide the batter evenly among the prepared muffin cups. The cups should be full. Sprinkle the 6 tablespoons of brown sugar evenly over top. Bake the muffins for 25 to 30 minutes, or until a toothpick inserted into the center of a muffin comes out clean. 

Baked Veggie Omelettes

7 eggs

2 tablespoons of milk / cream

1/4 cup of cherry tomatoes

1 zucchini

1 red bell pepper

pinch of black pepper


Preheat oven to 180 degrees and spray muffin pan with vegetable spray. Whisk 7 eggs, 2 tablespoons milk or cream, salt and pepper together until smooth. Divide the chopped vegetables evenly into each well in the prepared muffin pans. Pour enough egg mixture in each well to come to the top. Bake for 15-20 minutes. Remove from oven and let them cool slightly in pan for 5 minutes before removing to a wire rack.
