Now that our turkey marathon is over (I won), I need to get back on that Kanye Workout Plan. It is only a matter of time before the next holiday creeps up and we are back at square one with a drink in one hand and something I should not be shoving in my face in the other hand. Overindulging should be an endorsed skill on my LinkedIn profile, but as always: moderation is the answer. Needless to say, as I amp up my plethora of workout classes (which, in Milan, leaves much to be desired), I need those snacks to keep up with my pace!
I guess I can try to be a wee bit more careful during this festive season. When I get my workouts in, a snack at least an hour before and right after is a must. Depending on the time of day that I have a chance to hit the gym (more like when I find a second to leave my crazy, screaming toddler at home), if I can’t eat a full meal, the energy from a snack can fuel me up. I tend to keep it quite light, because there is nothing worse than hitting a treadmill filled with heavy food, and these Protein Peanut Butter Energy Bites are not only the perfect bite size snack, but they only take 5 minutes to make. Genius! It is the perfect amount of carbs, protein and fat to supply your body before burning a ton of energy. Just pop a couple of these babies before your sweat session, and you’ll be all set.
Protein Peanut Butter Energy Bites
½ cup of smooth/drippy peanut butter or almond butter
¼ cup of honey
⅓ cup of protein powder of your choice
1 teaspoon of vanilla extract
⅓ cup of unsweetened shredded coconut
½ cup of rolled oats
⅓ cup of flaxseed meal
1 tablespoon of mini chocolate chips
1 tablespoon of chia seeds
In a large bowl, mix together peanut butter, honey, and vanilla extract until it is all incorporated. Add in protein powder, shredded coconut, flaxseed, oats, chocolate chips and chia seeds. Mix until it is all incorporated. With your hands, form balls that stick together. If the balls aren’t sticking nicely, add more nut butter or honey. Store in the fridge for up to 1 week.
