Passion Fruit Chia Pudding Recipe
We are constantly in search for creative breakfast ideas to jazz up our most important meal of the day. Especially since most of Tamu and my workouts take place in the morning, we try to get in as many nutrients to help us get through the workout. But the repetitive two eggs (but only one yolk alla Kerwin) can only satisfy us ever so often. Our palate begs for something else. We love our chia puddings, and I found this fresh recipe to make one of our favorite plates a bit more summery. Check out this recipe for a Passion Fruit Chia Pudding.
⅓ Cup of Chia Seeds
1 Cup of Coconut or Almond Milk, Unsweetened
2 Tablespoons of Honey
Pinch of Sea Salt
¼ Cup of Shredded Coconut
2 Passion Fruits
Mix together in a medium bowl the chia seeds, coconut milk, honey and sea salt. Store in the fridge for at least 3 hours. I prefer making it the night before and placing it in the fridge overnight so it is perfect for the next morning. Mix evenly when the pudding is ready to be served, this serving makes for two servings. Scoop out the juice and seeds of the passion fruit and place over the pudding. Top with the shredded coconut and drizzle a tiny bit more honey. Enjoy!
