#17: Lunch with Social Eating Power House, Lidia Forlivesi

Hey There Pretty Birds,
We’re back with our latest episode of Tamu’s Cafe. In this episode I sit down with Lidia Forlivesi, founder of the successful blog Non Solo Food. I like to call Lidia a food multi-tasker because of the many hats that she wears on and off-line. I discovered Lidia and her work through some mutual friends who always spoke enthusiastically about her social eating projects. She’s someone that I’ve admired from a far for a long time, and I’m so happy to have gotten the opportunity to sit down with her for lunch here on Tamu’s Cafe. So, grab a cup or glass of your favorite beverage and please enjoy getting to know her.
In this episode we prepared a Blueberry Quinoa Power Salad with Lemon-Basil Vinaigrette.
Ingredients:
For the salad:
7 – 8 cups arugula
1 cup fresh blueberries
1 cup cooked quinoa (any variety)
½ cup pecan halves
1 avocado
Microgreens (optional)For the dressing:
¼ cup olive oil
2 tablespoons lemon juice
1 teaspoon apple cider vinegar
1 small garlic clove
½ teaspoon dijon mustard
½ teaspoon maple syrup
pinch of sea salt
1 cup fresh basil
Water if neededInstructions:
Separate all the salad ingredients evenly between four bowls.
Blend the dressing ingredients in a blender until smooth and creamy. Add a dash of water if needed to thin it out.
Pour dressing over salads and enjoy!
